Tomato soup overview

This low fat tomato soup recipe is an easy to make receipe for delicious tomato soup. This recipe takes just 50 minutes in total and serves up to 4 people.

Tomato soup ingredients

  • 900g chopped tomatoes
  • 1 chopped large onion
  • 2 tablespoons of olive oil
  • 4 chopped carrotts
  • 1 chopped red pepper
  • 2 cloves of garlic
  • 600ml of vegetable stock

Tomato soup method

Preheat the oven to 200 degrees C (180 for fan ovens)

Place all ingredients onto a large roasting pot (ie: tomatoes, onion, olive oil, carrots, red pepper and garlic).

Roast for 40 minutes in the oven.

Just before the 40 minutes is up, prepare the vegetable stock (so it's still hot)

Pour the vegetable stock into the pan and stir

Place the contents into a food processor and process until smooth.

Now you are ready to serve your tomato soup - serve with some crusty french bread just out of the oven.
