Roasted asparagus overview

This low fat roasted asparagus with garlic recipe is an easy to make receipe for delicious roasted asparagus. This recipe takes just 20 minutes in total and serves up to 4 people and is best served as a started. The asparagus season in the northern hemisphere is from May.

Roasted asparagus ingredients

  • 350g asparagus
  • 2 tablespoons of olive oil
  • 1/2 orange - juiced
  • 1 tablespoon of capers
  • 2 cloves of garlic

Roasted asparagus with garlic method

Preheat the oven to 200 degrees C (180 for fan ovens)

Boil the asparagus for 2 minutes (it should still be hard but just starting to go soft)

Drain and rinse under cold water.

Pour olive oil into shallow roasting tray and coat asparagus with the oil and leave on the tray

Slice the garlic gloves and place around the asparagus. Add capers around the garlic.

Roast for 8 minutes just until the asparagus is just going brown.

Now you are ready to serve. Serve warm with the orange juice sprinkled over the top and season with salt and pepper to taste.
